Radish Greens Pesto

Ready in 30 minutes

yield 1 cup

Calories 390 kcal


Ingredients

  • 4 cups radish tops (packed), washed and dried

  • Juice of ½ a lemon

  • 2-3 cloves garlic, coarsely chopped

  • ½ cups coarsely chopped almonds, macadamia nuts, or pistachios

  • ⅓ cup extra virgin olive oil plus more if needed

  • Salt and pepper to taste

Preparation

  1. Combine the first 6 ingredients in a food processor or blender.

  2. Process until smooth, scraping down the sides as needed.

  3. Add additional olive oil to achieve a thick sauce consistency.

  4. Season to taste with salt and pepper.

  5. Enjoy as a dip, spread, or as otherwise preferred. :)
