INGREDIENTS:
3 medium tomatoes
2 small cucumbers
1/2 red onion
3 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp lemon juice
salt and pepper to taste
1 bunch parsley and/or dill
6 oz feta cheese (optional)
INSTRUCTIONS:
Seed and chop tomatoes.
Chop cucumbers.
Slice or dice onion, depending on preference.
Combine cucumbers, tomatoes, and onions in a bowl.
Mix vinegar, salt, pepper, lemon juice, and olive oil together in a separate bowl.
Drizzle vegetables with dressing.
Add parsley, dill, and/or feta if using.
