SHEPHERD'S SALAD

INGREDIENTS:


  • 3 medium tomatoes

  • 2 small cucumbers

  • 1/2 red onion

  • 3 tbsp olive oil

  • 2 tbsp apple cider vinegar

  • 1 tbsp lemon juice

  • salt and pepper to taste

  • 1 bunch parsley and/or dill

  • 6 oz feta cheese (optional)

INSTRUCTIONS:

  • Seed and chop tomatoes.

  • Chop cucumbers.

  • Slice or dice onion, depending on preference.

  • Combine cucumbers, tomatoes, and onions in a bowl.

  • Mix vinegar, salt, pepper, lemon juice, and olive oil together in a separate bowl.

  • Drizzle vegetables with dressing.

  • Add parsley, dill, and/or feta if using.
